August 4 to 8, 2025: What to Cook This Week

To make the most of the abundance of fruit and veggies during the month of August, this week’s menu is brimming with flavours and colours. Add your tomatoes, bell peppers and zucchini to salads, grilled eats and sandwiches, for weeknight meals that are quick and easy to prepare.

Monday: White Bean and Crispy Tortilla Salad

We love tacos but sometimes, after a long day at work, who’s in the mood to assemble them? Here’s a salad version of the Tex-Mex classic where canned white beans from the pantry come to your rescue. It’s a vegetarian recipe that will surely bring sunshine to your plate.

Tuesday: Grilled Shrimp and Tomato Tostadas

For a colourful meal that features local tomatoes, whip up these loaded tostadas. Cook the shrimp and tomatoes in a wok on the grill and add cumin, paprika and lime juice for an extremely delicious meal.

Wednesday: Top Sirloin Steak with Bell Peppers and Avocado Salsa

How do you transform a simple grilled beef into an eye-catching dinner? By adding bell peppers and grilled polenta. You can easily find a tube of the latter at the supermarket; simply slice into rounds and toss them onto the grill.

Thursday: Barbecued Pork Chops and Zucchini

In this gorgeous and easy-to-prepare recipe, coat the pork chops in a quick marinade consisting of mayonnaise and lemon, and then grill along with zucchini. Top with arugula, tarragon and peaches for a perfect balance of flavours.

Friday: Mortadella Sandwiches with Pistachio Mayonnaise

Sandwiches are great for lunch, but also for dinner! They’re the perfect meal to help decompress after a long week. In this recipe, the sammie consists of mortadella, provolone cheese and olives, as well as a texture-rich homemade pistachio mayonnaise.
