3 One-Pot Dinners for Back to School

During back-to-school season, we love dinners that come together easily. And when they use up as few dishes as possible and aren’t boring, we’re really happy! In collaboration with Classico, here are a few one-pot recipes for the most serene of weeks.

1. Orzo with Pesto, Zucchini and Cherry Tomatoes

The end of summer is the perfect time to use up the last of your garden zucchini. Add them to this orzotto recipe, a cross between an orzo dish and a risotto, with chicken broth, Parmesan cheese and pesto. The result is a pasta dish coated in a creamy sauce, garnished with cherry tomatoes and green olives. This meal comes together quickly and everyone around the table will be happy.

2. One-Pot Lasagna with Rosé Sauce, Mushrooms and Pancetta (Alla Gigi)

This week, say “yes” to a lasagna without a long cooking time, that requires little prep work and where everything is cooked in the same pan to minimize the amount of dirty dishes. Do so by boiling the pasta in a savoury mix of rosé sauce and chicken broth, and then add pancetta and sautéed mushrooms for a rich and woodsy flavour. Add cheese, bake in the oven and you’ve got a traditional Italian dish made easy.

3. Tomato Rice with Shrimp

In this one-pot rice dish, the idea is to make a simplified version of a paella in the blink of an eye. The rice soaks up the sweet fragrance of the white wine, as well as the tomato basil sauce. This recipe also includes shrimp, which are added on top at the end. Serve this colourful dish with parsley and half-slices of lemon. All that’s left is to bring it to the table and feed your wanderlust directly from the dining room!
